In Cyprus, we have been producing Halloumi for centuries, it is a main staple in our diet and no meal would be complete without it! That is why we are bringing to you our Sparta Halloumi, so you too can you enjoy it the way we locals do over here….and experience the taste of the Mediterranean. Halloumi is made from a mixture of Sheep and Goats milk in the traditional Cypriot way. It has a distinctive texture similar to Mozzarella, and has a deliciously salty flavour, it is also uniquely different to other cheeses in its versatility, as it does not melt when heated – lending itself to most recipes… Great for all you Vegetarians and as an alternative to meat!


Halloumi is excellent grilled, fried, barbecued, grated or simply eaten in its natural form. Use as an appetiser, a starter, or an accompaniment to any meal…grate onto pizza and pasta, add to salads and sandwiches, deep fry batons as hors d’ouvres, or pair it fresh with watermelon (our favourite)! It’s quick, it’s easy, it’s gourmet, but most importantly is tastes incredible!!

Serving Suggestions & Recipes

If you’ve never tried Halloumi cheese, or you need some inspiration, you simply must learn how to use it with these quick and easy recipes and serving suggestions to enhance any meal!

 

GRILL OR FRY

Cut the Halloumi into 1 cm thick slices .Place onto a pre-heated non-stick frying pan or griddle, on a medium heat (no oil necessary) and cook for approximately 2 minutes on each side or until golden brown. While warm squeeze fresh Lemon Juice over browned Halloumi, or drizzle with olive oil and freshly ground black pepper and serve immediately.

BARBECUE

Cut the Halloumi into 1 cm thick slices .Cook over charcoal or gas grill for approximately 2 minutes on each side or until golden brown. Remove and drizzle with Greek honey for a deliciously sweet treat! Serve immediately.

Cut the Halloumi into 2 1/2 cm cubes. Soak some bamboo skewers in water. Cut onion, peppers and mushrooms into large pieces roughly the same size. Thread the cheese, vegetables and cherry tomatoes onto the skewers alternating the flavours. Barbecue or grill for about 10 minutes or until the cheese and vegetables turn golden. You could also marinate the cheese in a mixture of lime, olive oil and coriander or a marinade of your choice, for about an hour before cooking to give it a different twist.

BATTERED

Ingredients: 1-2 packets of Halloumi cheese, 125 g plain flour, ¼ tsp white pepper, ¼ tsp salt, a few drops of vegetable oil for the batter, 125 ml warm milk and water (about half and half), 1tsp baking powder.

Sift the dry ingredients into a bowl, make a well in the middle of the flour and then add the oil and a small amount of the half milk, half warm water mixture. Stir slowly bringing down more and more of the flour mixture until it is all combined. Beat well until it is very smooth, you can do this by hand or use an electric beater. For an extra crisp batter mixture add an extra spoonful of baking powder to the dry ingredients. Cut the Halloumi into thick finger shapes. Pat the cheese shapes dry with kitchen towel and then dip them into the batter mixture making sure that they are completely coated. Heat oil in deep fat fryer to 150c. Drop the battered cheese pieces into the hot oil one at a time. Once cooked drain well onto absorbent kitchen paper.

Serve the Halloumi with a spoonful of tartare sauce and garnish with fresh parsley and lemon wedges – trendy!

GRATE

Grate over Pasta, onto Pizza, in piping hot Soup, on a fresh crusty bread roll or as an addition to your omelette. Add as an ingredient to breads or in savory cakes, the options are endless.

NATURAL

Slice the Halloumi and serve fresh with fruit, or cube and add into salads. The best way to serve in a sandwich is stuffed into pitta pockets with just tomato and cucumber – a real Cypriot sandwich!
